Smoked Whole Cauliflower 

Sauce Ingredients: 
1 tbls of oil
1 Cup of Mayonnaise (substitute with Greek Yogurt)
1 tbls Lemon juice
3 tbls of your favorite BBQ dry rub 
1 tbls minced garlic
1/2 Cup of parsley
1 Tsp Salt
1 Tsp Black pepper
*Mix all together 

Spicy option: add an additional 1 tsp Cayenne pepper and 1 tblsp of Siracha 


Directions:
Trim off stem and leaves to cauliflower. Leave whole or if you prefer cut in half.

Poach cauliflower in boiling water for 4 min. Remove and pat dry, let cool for 5 min.

Place on tray and Cover entire cauliflower with sauce.

Pre-heat smoker to 250

Place in smoker for 70 hour (until cauliflower is soft)

Remove and let cool for 15min
Slice up and enjoy!
